How to Brew an Authentic Espresso

In Italy, every morning starts with caffè: Espresso, Cappuccino, Macchiato. You can either drink coffee at the Italian bar or at home, what really matter is to enjoy your coffee ritual and take your time. Espresso beats the time in Italians' life. When the intense caffè smell comes from the kitchen, you know it is time to wake up. Believe me, once you will smell it,  you will never forget it.

For the most of us, coffee smell means home, family, childhood and for many people (for me as well)  brew an espresso as first thing in the morning is a Zen ritual. Then there is the after-meal Espresso, mid-afternoon Espresso and Espresso when a friend comes over to my place.

 

 

Next time you will be dying for an Espresso you have two choices. You can grab one at Starbucks or in every coffee shop and pretend that you are drinking an espresso or you can start to find out how to make an authentic Italian Espresso at home.

 

FIRST OF ALL YOU NEED A PROPER ESPRESSO KIT

 

This means you need at least a Bialetti (the Original Moka Patenter in 1933). An Authentic Italian Espresso Grounf Coffee. You don't want to broke your Moka with a wrong type of coffee. A proper cup with a saucer (otherwise it is  not polite).

KNOW YOUR MOKA! IT LAST FOREVER

 

Once you got your Moka, you will understand that a Moka is something personal which will Brew coffee for you every day (several times per day) for the rest of your life. Yes because a Bialetti lasts Forever, you need just to change periodically a gasket. The fascinating thing is that every Moka its unique and day by day you will learn how to improve your brewer abilities. 

 

BEFORE THE FIRST COFFEE WITH YOUR BRAND NEW MOKA

 

The Moka Pot is a fascinating unique engineering and design product. If you have a new coffeepot, first of all, remember to wash it with water and baking soda. Then make coffee twice but don't drink it! Why? Well, we like to compare the coffeepot to a new car. When you buy a new car, you have a first "running-in" phase that lasts the first 1000 miles. For a coffee pot, the "running-in" is at least 2 coffees. Remember the most you use your coffee moka the better. This means that the quality of your espresso will increase coffee after coffee. This is exciting! Isn't it? 

 

HOW TO BREW ESPRESSO COFFEE

 

Despite you may think, Moka is really easy to use. It is made of three parts:

 

  1. Il "bollitore" o "caldaia" (boiler). Fill with water up to the safety release valve. (If you want to avoid a watery caffè).   

  2. L' "Imbuto-filtro" (funnel-shaped metal filter). Insert it in the boiler. Then, with a spoon, fill with coffee and create a slight mountain. Don't press with the spoon. 

  3. Il "Bricco" (Upper part or container) . The upper part is screwed onto the base. This is the container where the espresso will flow. Hold the base and tightly screw the upper part of the pot onto the base. Remember "tightly screwed" Otherwise, your coffee will come out from the junction.

  4. Now the secret is the slow flame. Heat over a low flame so the temperature rises gradually. This allows slower and more thorough extraction and prevents the handle burning. The coffee starts to be extracted from the extraction funnel as soon as the water begins to get hot.

  5. The gurgles tell us that the water has finished. Now is the time to turn off the heat to prevent the coffee from burning.

  6. Enjoy your Zen moment. Before drinking your espresso you can drink sparkling water to rinse your mouth and taste all the aromas or have a sweet like chocolate to have one flavor predominant to others.

HOW TO CLEAN YOUR MOKA

 

To wash your Dear Moka you can simply rinse with warm water. Don’t clean your moka pot with soapy water or an abrasive sponge. This is it? So easy? Yes, it is.
