Modica chocolate is a raw chocolate recipe originated by traditions of the ancient Aztecs.
This chocolate still has a cocoa percentage equal to 65% or higher, the remaining ingredients are just sugar and spices. (here the Secrets of Modica Chocolate)
The mix between chocolate and the king of spices, Chili, is a blast of taste and flavors. Here we propose a revisited version of a salty Mexican recipe in the Sicilian way.
You can use this sauce on top of the fried eggplant with roasted nuts, or for most demanding palates, on braised, roast chicken or even sausage.
